Natural wines’ came about partially as a response to over usage of sulfur or SO2 in commercial wine production. Certain wines are easier to make without SO2 than others. Riesling is not one of them. Unsulfured Riesling is a tricky beast, so much so that extremely few winemakers even attempt it (and even fewer succeed). Bryan Berenguer is one of them and he learned from the best, famed Mosel Valley natural winemaker Rüdi Trossen.
